Please join us and welcome Chef Yuji Haraguchi of Okonomi as he demonstrates whole fish butchery with Ahi Tuna. Originally from Japan, then Brooklyn, and now located on Oahu. He has been joining us monthly to pass forward these culinary arts.

About the event
Yuji is joined by Chef Vitaly Paley who adds a few additional recipes that show the diversity of this ingredient.
The seminar will include:
1. Explaining the difference between Japanese knives and Western knives
2. Sharpening demonstration of both kinds
3. How to scale off, take head and guts out, clean the blood properly
4. How to make fillets and break them down into sashimi-ready blocks
