About the event
In this class, participants will learn to make a sponge cake, mousse filling, and build a bouche. Students will learn to make a ganache and decorate their own bouche to take home for Christmas. Make the perfect sweet centerpiece for your Christmas dinner with Chef Pauline Lam.
Chef Lam comes from Northern California where she has spent most of her career as a Pastry Chef. Born in Hong Kong and raised in the Bay Area she attended the Le Cordon Bleu in London. She learned from greats like Sherry Yard at Spago in Beverly Hills, Thomas Keller at Bouchon Bakery and Corporate Pastry Chef for Michelin Star Chef Roland Passot. As the Executive Pastry Chef at a small tech company ( Google!), she expanded that program for nearly a decade before the move to savory as Chef de Cuisine of Root Cafe at Google.
