About the event
A Bûche de Noël is a true showstopper, and creating all the intricate elements from scratch is incredibly rewarding. Chef Pauline will guide you through the steps to create an awe-inspiring Bûche de Noël (yule log cake) from the light sponge cake to the decadent buttercream, ganache glaze , mushrooms, and snow cover "pine sprigs". You will enjoy decorating your own Bûche de Noël cake to take home.
Chef Lam comes from Northern California where she has spent most of her career as a Pastry Chef. Born in Hong Kong and raised in the Bay Area she attended the Le Cordon Bleu in London. She learned from greats like Sherry Yard at Spago in Beverly Hills, Thomas Keller at Bouchon Bakery and Corporate Pastry Chef for Michelin Star Chef Roland Passot.
