In the southern Mediterranean, starting in late autumn, Chetoui olives are hand-picked. Stone-crushing and leaf-settlement (by hand) create an elegant oil. Smooth and clean on the palate, this fruity, first-cold-pressed, unfiltered oil has the color of green apples and aromas of freshly picked vegetables. Its finish is sweet and persistent.

Capers are the flower buds of a native Mediterranean shrub. They contain a very beautiful aromatic scent, unlike capers in brine. The capers from Moulins Mahjoub, which grow on the mountain slopes around Tebourba, are dried in sea salt to preserve their unique flavor.

In Tunisia, this couscous-like product is called M'hamsa. Made from crushed durum wheat semolina, M'hamsa is part of Berber culinary traditions. It is obtained by a generous, repetitive rolling gesture in the palms of the hands. The fine wheat semolina is transformed into more consistent grains with water, extra virgin olive oil, salt, and finally, twelve days of exposure to the sun.

Dried in the hot summer months of July and August, these tomatoes are then individually layered in glass jars and covered with extra virgin olive oil. It takes 14 to 15 kilos of fresh tomatoes to make just 1 kilo of sundried tomatoes. Most other sundried tomatoes use the less expensive and less fl avorful seed oil; however, the Mahjoubs’ decision to use olive oil means that once the tomatoes are gone, there is still a jar of fl avored oil to drizzle over grilled bread or add to a salad dressing. RECOMMENDED USES: These tomatoes are excellent with pasta, couscous, and salads. Drizzle the remaining olive oil over grilled bread or add to a salad dressing. This plump green olive variety, known for its meaty fl esh, is native to Tunisia. To preserve the integrity of the fruit in the process of debittering, instead of crushing the olives, the Mahjoubs carefully open each olive with a slight incision by hand. Once they are cured for nine months, the olives are bottled in brine with a slice of lemon and a branch of wild fennel.
