Fontina DOP Alpeggio represents the quintessential summer production. Produced exclusively during the months of June, July, August and September, this variant comes from the milk of cows of the Aosta Valley breed that graze at high altitudes, up to 2,700 meters above sea level. At such altitudes, the grass and mountain flowers give the milk sweet aromas and flavors, which are reflected, therefore, in Fontina DOP Alpeggio. The milk is processed directly on site, immediately after being milked. In this way, the organoleptic characteristics derived from the flora present in the high mountains remain unaltered. Fontina DOP Alpeggio can be recognized by its dark brown rind and deep straw-yellow paste, which comes precisely from the cows' diet. In addition, it is soft and melting.
