Affectionately nicknamed “sweet Cantal” by locals, young Cantal is a cheese with a fresh, lactic profile and a delicately supple texture. Made and matured entirely in its region of origin in the Cantal department, the milk is collected nightly and transformed into wheels of cheese in Saint-Flour before being carefully aged in cellars for one to two months.
The result is a firm yet melting cheese with gentle suppleness on the palate, subtle freshness, and clean lactic aromas. Its natural rind ranges from fine white to slightly greyish, reflecting its traditional, unadorned character.
