Domaine CastelaS revisits the age-old traditions of Provence to create Noir d’Olive AOP olive oil. Made from four fruity olive varieties—Salonenque, Aglandau, Grossane, and Verdale—grown in their own groves, the olives are hand-harvested at full ripeness and stored in an oxygen-free environment to begin a gentle fermentation, recreating the flavor of preserved black olives once produced in traditional stone mills.
This black-fruity olive oil expresses the full aromatic range of the Vallée des Baux AOP, with notes of black tapenade, confit olive, subtle fermentation, cocoa, vanilla, and a hint of truffle on the finish. Wonderfully mild and smooth on the palate, it is ideal served at room temperature in garlic-seasoned salads, for making mayonnaise, or drizzled over toasted baguette, mushrooms, or mashed potatoes.
