INGREDIENTS: Yamahisa soy sauce (honjozo) from Shodoshima, three-year aged hon-mirin from Hakusen Shuzo, Hokkaido beet sugar (including molasses), junmai sake from Hakusen Shuzo, and Fuji Junmai rice vinegar from Iio Jozo in Kyoto.

This traditional salted and simmered kombu (shiobuki kombu) is made by crystallizing natural umami without relying on amino acids or yeast extract. It features carefully selected seasonings, natural ma-kombu from Shirakuchihama in Hakodate, Hokkaido—an area known as the home of tribute-grade kelp—and richly flavored dried scallops from Hokkaido.
