Crafted in collaboration with the Michelin-starred Restaurant Schattbuch, Shadow Blossom (6 Pfeffer), also known as Schattbuch Pfefferkäse, is a distinctive creation from Hofkäserei Kraus in the heart of the Allgäu. Cheesemaker Albert Kraus worked closely with the restaurant’s team to develop a traditional Allgäu semi-hard cheese made from pristine local milk, then refined by coating the rind with an aromatic blend of Wild Madagascar pepper, long pepper, tailed pepper, Kampot pepper, pink berries, and cardamom. Pleasantly soft with a delicate crunch, the texture is creamy and buttery, balanced by the vibrant heat and complex character of its layered spice blend.
